Bottle Gourd Pudding

Dudhi no halwo



This is a recipe for one of my favorite desserts. Bottle Gourd is not commonplace but can be found fairly easily in Indian grocery stores (ask for a dudhi). It can be enjoyed hot or cold, I prefer it hot. You should try it both ways and see how you like it.

Ingredients

Procedure

  1. Chop and shred the bottle gourd

  2. Squeeze most of the water out of the shredded bottle gourd

  3. Fry the shredded bottle gaurd with the ghee (or oil) until water is evaporated

  4. Add the Half & Half milk and sugar and keep mixing

  5. Add cardamom powder to taste

  6. Add food coloring

  7. Let cool for a few minutes
